Lately I was reminiscing about a long time ago, a very happy period when I was sharing a beautiful apartment on the Stadionkade, here in Amsterdam, with a very dear Italian friend, a real sister from another family. We were both freelance translators - she still is - and her boyfriend Manno would come and visit from Italy for long periods, making us both very happy with his simple but wonderful Italian cooking while we were working hard to meet our deadlines. Manno would always make us lovely breakfasts, lunches, aperitifs and dinners so that we wouldn’t be too distracted by mundane things while working. 😃
How lucky were we?

One of the simplest things he made for our aperitivo, usually accompanied by a glass of bubbles or white wine, is something that I’ve been craving for a whole week: crostini burro e acciuga (with butter and anchovy). So it was really time I made this to satisfy my craving!

I’m not a big fan of whole anchovies in oil - they’re usually too strong for me - but the rich sweetness of the butter takes off their deeply salty and intense edge, making them immensely enjoyable.  
Just good butter and anchovy on good crunchy bread. Simply divine. 

He would usually decorate them with a few parsley leaves, the ever-present herb on many Italian dishes. Very Seventies, but I LOVE it and I love to add it to practically everything. 
That’s why I decided to take this very simple antipasto a step further by mixing a lot of chopped parsley into the butter. I also added a pinch of salt and some freshly ground pepper and voilà: crostini burro e acciuga ready to be eaten.

No need to post a recipe here: just make sure your bread is good and your butter even better. Pair this with a glass of Prosecco and you can’t go wrong. Cheers!

🍋 There are several things an Italian pantry can’t do without: canned and/or strained tomatoes, sea salt, good olive oil, fresh herbs, onions and garlic, pasta, and lemons. 

🍋 Italians tend to use lemons a lot: a little squeeze makes everything taste better and we often put a sunny wedge not only in our cold drinks but also in a classic English tea. 

🍋 I’m a citrus person: there are ALWAYS organic lemons in my fridge and I mostly use them to flavour drinking water, salad dressings - I very much prefer lemon to vinegar - and herbal teas. Plus their peel is my saviour - and savour - when my digestion is slow and for those recipes that turn out a bit dull and characterless. 
Grate some organic lemon rind in any dish, savoury or sweet, and everything will immediately taste a lot more interesting.
Or slowly and deliberately chew it to help you digest after a heavy meal. Your stomach will thank you. 

🍋 Happiness is a lemon tree in the garden. Is there any tree more generous and happy-making than a citrus tree? Usually it can have blossoms and ripe fruit at the same time, so you can harvest all year round. To me, that’s the epitome of generosity. 🌳 

🍋Since I don’t have the right space to grow a lemon tree yet, I enjoy the beauty of its fruit in my fridge, on my plate and in front of my camera. A bit of sunshine, fresh, tangy and healthy, to brighten up my days.
