🍅Pasta alla crudaiola is THE summer pasta in Puglia, the region where I spent most of my younger years, and it happens to be my favourite pasta of all. 
It’s easy to make and it requires just a few ingredients, mostly raw (“crudo” in Italian means raw). One of them, the most important one, is ricotta salata, salted ricotta. You can find it in good cheese shops (here in The Netherlands it’s not in supermarkets YET @albertheijn @jumbo @plussupermarkt 😉) and it really makes a big difference. 

🍅It’s dry, hard ricotta, usually made with sheep’s milk, that can be grated and used for all sorts of dishes, mostly for pasta. And in spite of the fact that most Italians love their cheese finely grated for this dish the ricotta is usually quite flaky. 

🍅Good, tasty tomatoes are also a must, as is an excellent extra virgin olive oil. 

🍅Crudaiola is often eaten cold as a pasta salad. It serves 2 eaters (main) or 3-4 (starter). Not everyone adds garlic and pepper but I love them. Hope you’ll make it too.

🍅Make this super easy and very summery Mediterranean bowl with me!

🍅 A few tips before you start:
🥒raw chestnut mushrooms have a wonderful bite and texture but they have to be super fresh. 
🥒If you don’t have fresh marjoram you can use oregano. Use the herbs you have! Basil, chervil, parsley and tarragon will be great too. 

🍅I forgot to add the egg to the reel’s steps. 😂

🍅For 1 person you’re going to need:
80-100 gr. cooked millet
80-100 gr. cooked black lentils
1/3 cucumber, thinly sliced 
2 plum tomatoes, in chunks
3 sun-dried tomatoes in oil, roughly chopped 
4-5 chestnut mushrooms, thinly sliced 
1 boiled egg
fresh marjoram

🍅DRESSING:
3 parts of ev olive oil
1 part of lemon juice
some fresh thyme leaves
grated lemon zest
salt & pepper

🥒 🍋 When Summer hits with her heat I have one “life-saving” drink: ice-cold water with cucumber, mint and lemon. 💦 

🥒🍋I use filtered water that I infuse with cucumber and fresh mint while in the fridge. 

🥒🍋Then, just before drinking, lemon and ice cubes go in. My favourite Summer drink.

🍅Summer is THE season for all sorts of beans and great sun-ripened tomatoes. 

🍅I took advantage of these beautiful products to make this super easy salad with udon and 3 types of beans (fresh borlotti, Dutch spekbonen - big green beans - and broad/fava beans). 

🍅It tastes a bit like Italy, a bit like Holland and a bit like East Asia thanks to the sesame oil, the sriracha and the soy sauce, and it’s perfect for this hot weather if you don’t really feel like cooking. 🙃
