☀️ Sunny days and simple foods. When it’s warm, most of us need simpler nourishment. I’m a big fan of the “less is more” rule that makes the Italian cuisine so loved all over the world: a few simple ingredients of good quality combined together for maximum taste. And when the weathers is warm, I apply this rule even more. 

☀️ Take bread, olive oil and salt, for example: a good extra vergine, crunchy sea salt (try my @midorigreensalt for extra taste) and some great crusty bread are a treat. Especially when accompanied by a good glass of cold white wine - in Summer I even drink certain reds cold - in the sun. 

☀️Enjoy this beautiful sunny Sunday!

🥔 🥗 A simple little salad with red baby potatoes, mackerel and a spicy green dressing perfect for an easy Easter lunch. 
🥔 🥗 I’ve used the lovely red baby potatoes I got from @fannyyprins when we did a food photography course together where she brought kilos and kilos of different potatoes to photograph for her job at @quiksqualitypotatoes 🙃

🥔🥗And there’s mackerel too! According to @visrecepten (the Dutch Fish Marketing Board) this is its month and I couldn’t be happier, since I love that little bugger! 💙🐟 

🥔🥗So thank you Fanny for the lovely little spuds, I hope you’ll enjoy this salad for Easter too. 💫

💚What’s your favourite vegetable? For me there’s undoubtedly just one king: the Artichoke. 👑
💚Raw, thinly sliced and simply dressed with olive oil, salt and lemon juice is how I like to eat it the most. All its slightly ferrous goodness gets exalted and it’s so pleasantly crunchy. 
💚But also dipped in the same mixture, leaf by leaf. Raw or steamed, the last option in case of bigger ones. 
💚When I was a child that’s how we ate them at home. We would all get an espresso cup filled with that golden mixture and we’d dip away, removing the softer, whiter part with our teeth. Food can be fun! 
💚Another great favourite: dipped in batter and deep-fried with just a sprinkle of sea salt as a finishing touch. One of my Mum’s best side dishes ever. Usually eaten - by me - before they reach the table. 🙃
