Fresh, summery, lemony, sweet and peppery at the same time. And totally vegan! You can, of course, add a little bit of Parmesan or pecorino to the mixture, if you wish, but believe me, it&#8217;s not really necessary. All the different tastes blend so perfectly well that you won&#8217;t miss the cheese.<\/p>\n<p>This recipe has been inspired by my recent holiday in <strong>Sicily<\/strong>, in my Top 3 of favourite Italian regions with Puglia and Tuscany. The food there is divine and so simple! The sun-dried tomatoes are incredibly sweet and tasty and the <strong>dried oregano<\/strong> is pure magic: so aromatic! I also brought back with me some roasted hazelnuts to die for: chunky, crunchy and very intense. Plus, of course, some pistachios and a bag of dried chestnuts, all from the Nebrodi mountains.<br \/>\nIf you&#8217;re in Sicily don&#8217;t forget to get yourself some small <strong>sun-dried Pachino cherry tomatoes<\/strong>. You can find them at markets and in shops but taste them before buying: they&#8217;re not all that great. They&#8217;re supposed to be intensely sweet even when salted to preserve them.<\/p>\n<p>I&#8217;ve prepared this dish with yellow lentil pasta (spaghetti) but you can, of course, use normal durum wheat, khorasan, spelt or other gluten-free pasta.<br \/>\nThe sauce is ready in a matter of minutes. If you don&#8217;t have pre-roasted hazelnuts roast some raw ones in a non-stick skillet until golden brown. And if you are allergic to them, you can use pine-nuts.<\/p>\n<p>Enjoy!<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-7896\" src=\"https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/06\/pesto-di-carote-signature-2-225x300.jpg\" alt=\"carrot and hazelnut pesto\" width=\"600\" height=\"800\" srcset=\"https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/06\/pesto-di-carote-signature-2-225x300.jpg 225w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/06\/pesto-di-carote-signature-2-773x1030.jpg 773w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/06\/pesto-di-carote-signature-2-1125x1500.jpg 1125w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/06\/pesto-di-carote-signature-2-529x705.jpg 529w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/06\/pesto-di-carote-signature-2-450x600.jpg 450w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/06\/pesto-di-carote-signature-2.jpg 1451w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>Serves 2<\/p>\n<p>200 gr. of lentil spaghetti<br \/>\n150 gr. of bimi (Tenderstem broccoli)<br \/>\njuice of 1\/2 a lemon<br \/>\nsalt and black pepper<\/p>\n<p><strong>For the pesto:<\/strong><\/p>\n<p>2 medium-sized carrots, peeled<br \/>\n1 handful (about 30 gr.) of roasted hazelnuts<br \/>\n5 sun-dried tomatoes in olive oil or soaked in hot water if dried<br \/>\n1 clove of garlic<br \/>\n6 tablespoons of e.v. olive oil<br \/>\n8 tablespoons of water<br \/>\na pinch of chilli flakes or a little chilli oil<br \/>\n1\/2 lemon, juice and rind<br \/>\n1\/2 orange, its juice<br \/>\na big pinch of good dried oregano or a few sprigs of fresh oregano<br \/>\nsea salt<br \/>\nblack pepper<\/p>\n<p>Cook the pasta in boiling salted water until al dente.<\/p>\n<p>In the meantime, mix all the ingredients for the pesto in the blender using the juice and rind of 1\/2 a lemon (keep the other half for the bimi and add a little bit more water and\/or oil if you want your pesto to be a bit more liquid).<\/p>\n<p>Add as much chilli oil or flakes as you like (I make my pesto just slightly hot) and go nice and heavy on the oregano.<\/p>\n<p>Roast the bimi broccoli in a grilling pan without any oil until slightly tender. It&#8217;s nice if they keep a good bite (make sure you don&#8217;t burn the most delicate parts of leaves and florets).<\/p>\n<p>Drain the pasta and keep a bit of the cooking water to dilute the pesto if you feel it&#8217;s too thick.<\/p>\n<p>Dress the bimi with some lemon juice, olive oil, salt and pepper.<\/p>\n<p>Toss the pasta with the sauce in a big bowl and serve with the bimi.<\/p>\n<p><strong>TIPS:<\/strong> chop the carrots coarsely before putting them in the mixer.<br \/>\nThe lemon juice will keep the color of the sauce nice and bright.<\/p>\n<\/div><\/section>\n","protected":false},"excerpt":{"rendered":"","protected":false},"author":71,"featured_media":7914,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":[],"categories":[19,534,532,621,668,536,757,409,537,535],"tags":[579,580,759,328],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v19.7.2 - https:\/\/yoast.com\/wordpress\/plugins\/seo\/ -->\n<title>Linzenpasta met wortel-oregano-hazelnootpesto &amp;
