Ik heb de prachtige, donkere biologische <strong>spaghettoni<\/strong> (dikke spaghetti) gebruikt van <span style=\"text-decoration: underline;\"><a href=\"http:\/\/www.prodottibioalberti.it\/en\/organic-pasta-umbria-italy.php\" target=\"_blank\"><strong>Bio Alberti<\/strong><\/a><\/span>. Die zijn bereid met <strong>Senatore Cappelli<\/strong>, een oude tarwesoort die na de zestiger jaren bijna in de vergetelheid was geraakt en nu weer &#8220;in&#8221; is en veel gekweekt wordt in de zuidelijke regio&#8217;s van Itali\u00eb. Deze cultivar werd oorspronkelijk &#8220;samengesteld&#8221; door Italiaanse geneticus <strong>Nazareno Strampelli<\/strong> in 1915 in Puglia, waar de Senatore Cappelli gebruikt wordt voor brood, pasta en andere kwaliteitsproducten zoals deze spaghettoni met de prachtige bite (ze hebben ongeveer 18 minuten nodig om te garen en zijn altijd goed <em>al dente<\/em>!).<\/p>\n<p>Ik ontdekte deze geweldige ambachtelijke pasta tijdens een van mijn show cookings bij het <a href=\"http:\/\/littleitaly-event.nl\/\" target=\"_blank\"><span style=\"text-decoration: underline;\"><strong>Little Italy<\/strong><\/span><\/a> event in Amsterdam afgelopen weekend en ik werd er verliefd op. Ik ontmoette de jongste generatie (broer en zus Andrea en Benedetta) van de Alberti-familie in <span style=\"text-decoration: underline;\"><strong><a href=\"http:\/\/web.bellavita.com\/\" target=\"_blank\">Bellavita London<\/a><\/strong><\/span> afgelopen juni toen ik daar als Resident Chef werkte. Daar heb ik ook hun fantastische olijfolie en peulvruchten geprobeerd en ik was erg blij om ze ook hier in Amsterdam te vinden en met een van hun heerlijke biologische pasta&#8217;s te mogen koken.<\/p>\n<p><img loading=\"lazy\" class=\"aligncenter wp-image-6887 size-large\" src=\"http:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/02\/IMG_0201-signature-579x1030.png\" alt=\"spaghettoni shiitake chilli \" width=\"579\" height=\"1030\" srcset=\"https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/02\/IMG_0201-signature-579x1030.png 579w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/02\/IMG_0201-signature-450x800.png 450w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/02\/IMG_0201-signature-169x300.png 169w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/02\/IMG_0201-signature-397x705.png 397w, https:\/\/www.cucinadelsole.nl\/wp-content\/uploads\/2019\/02\/IMG_0201-signature.png 720w\" sizes=\"(max-width: 579px) 100vw, 579px\" \/>De familie Alberti was op de Little Italy aanwezig samen met een <a href=\"http:\/\/www.umbriatastes.eu\/\" target=\"_blank\"><span style=\"text-decoration: underline;\"><strong>consortium van producenten uit Umbri\u00eb<\/strong><\/span><\/a>, de regio die als het groene hart van Itali\u00eb wordt beschouwd. Ook hier heb ik een van de geweldige olijfoli\u00ebn uit Umbri\u00eb gebruikt, een <a href=\"http:\/\/www.decimi.it\/emozione-oil-bio.htm\" target=\"_blank\"><span style=\"text-decoration: underline;\"><strong>biologische extra vergine van Decimi<\/strong><\/span><\/a>, die ik als <em>finishing touch<\/em> over mijn pasta heb besprenkeld.<\/p>\n<p>Het gerecht is in 20 minuten klaar en het is super lekker, ook mede dankzij de aangename structuur van deze spaghettoni. Probeer het en je zult er ook van houden!<\/p>\n<p><strong><br \/>\nSpaghettoni BioAlberti con shiitake e peperoncino<\/strong><\/p>\n<p>Voor 2 personen<\/p>\n<p>160 gr. spaghettoni BioAlberti<br \/>\nextra vergine olijfolie<br \/>\n1\/2 middelgrote ui, gepeld<br \/>\n2 teentjes knoflook, gepeld<br \/>\neen bosje platte peterselie<br \/>\neen snufje chili vlokken<br \/>\n6-8 pruim cherrytomaatjes<br \/>\n80-100 gr. shiitake paddenstoelen<br \/>\nzout en zwarte peper<br \/>\nbiologische extra vergine olijfolie van Decimi<\/p>\n<p>Fruit de gesnipperde ui, de gepelde knoflookteentjes, de helft van de fijngehakte peterselie en wat chilivlokken in een paar lepels olijfolie tot ui en knoflook zacht zijn.<br \/>\nVoeg de gehalveerde pruim cherrytomaten toe en laat ze garen tot ze zacht zijn.<br \/>\nVoeg de in reepjes gesneden shiitake paddenstoelen toe en laat goed garen.<br \/>\nBreng op smaak met zout en peper en verwijder de teentjes knoflook.<\/p>\n<p>Kook de spaghettoni in veel kokend water met zout tot hij al dente is.<br \/>\nGiet af, doe in de pan met de paddenstoelen, roer en laat nog een minuut verder garen.<\/p>\n<p>Voeg indien nodig een beetje pasta kookwater toe voor extra vocht.<\/p>\n<p>Serveer gegarneerd met wat verse peterselie en een scheutje Decimi extra vergine olijfolie.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Dit gerecht is snel, eenvoudig en heel lekker.
