Er bestaan verschillende versies, met of zonder aardappel, en vaak\u00a0zonder sperzieboontjes, maar dan wel met rauwe paprika, ansjovis en zwarte olijven\u00a0uit de omgeving van de Franse stad Nice.<\/p>\n<p>Ik vind aardappelen en sperzieboontjes juist\u00a0heel lekker hierin, en voeg\u00a0het liefst geen ansjovis toe. Ook gebruik ik Italiaanse Taggia (of <b>Taggiasche<\/b>) olijven, die eigenlijk precies hetzelfde zijn als de Ni\u00e7oise olijven uit de Franse riviera, ook Cailletier genoemd, die altijd een ingredient van\u00a0deze salade zijn.<\/p>\n<p>Het is dus een insalata\u00a0nizzarda geworden, de naam die men in mijn geboorteland voor dit gerecht gebruikt. Een\u00a0Ni\u00e7oise met een Italiaanse twist.<\/p>\n<p>Deze heerlijke salade is kleurrijk en vullend. Perfect als lunch om mee te nemen (bijvoorbeeld in een <b><i>mason jar<\/i><\/b> zoals in mijn foto\u2019s) maar ook zeer geschikt als avondmaaltijd. Voeg een paar\u00a0sneetjes knapperig\u00a0brood\u00a0toe en je hebt een complete maaltijd!<\/p>\n<p><b>TIPS<\/b><\/p>\n<p>Kook de aardappelen in de schil zodat ze minder vocht absorberen en stevig blijven. Je kunt ook aardappelrestjes gebruiken.<\/p>\n<p>Als je biologische aardappelen gebruikt kun je ze ook ongeschild eten.<\/p>\n<p>Als je geen Taggia olijven ui Liguri\u00eb kunt vinden zijn\u00a0andere zwarte stevige olijven naar keuze ook goed (bijvoorbeeld Kalamata&#8217;s).<\/p>\n<p>De dressing van mijn versie is ook anders. Je kunt eventueel meer basilicum gebruiken en alle ingredi\u00ebnten\u00a0met de staafmixer pureren om een mooi groen sausje ervan\u00a0te maken.<\/p>\n<p><b>Insalata nizzarda<\/b><\/p>\n<p>Voor 2 personen<\/p>\n<p>DRESSING:<\/p>\n<p>8 eetl e.v. olijfolie<br \/>\n2 eetl citroensap<br \/>\n1 eetl honing<br \/>\nzout naar smaak<br \/>\nzwarte peper naar smaak<br \/>\neen takje basilicum, alleen de blaadjes<\/p>\n<p>SALADE:<\/p>\n<p>6 kleine gekookte aardappelen, ongeschild<br \/>\n2 handenvol schoongemaakte sperzieboontjes<br \/>\n250 gr. tonijn op olie, grof verkruimeld<br \/>\neen paar takjes basilicum, alleen de blaadjes<br \/>\n12-14 cherry tomaatjes, gehalveerd<br \/>\n2 kroppen mini Romeinse sla (Little Gem), in stukjes<br \/>\n16 Taggia olijven<br \/>\n2 (zacht)gekookte eieren<br \/>\nzout en zwarte peper<\/p>\n<p>OOK NODIG: twee mason jars<\/p>\n<p>Maak eerst de dressing\u00a0door alle ingredi\u00ebnten door elkaar in een kommetje te roeren.
