Om echt te zijn zou het met vlees gemaakt moeten worden, en dit is niet het geval.<\/p>\n<p>Ik hou van de originele versie en toch eet ik deze vaker omdat het lichter, makkelijker verteerbaar en diervriendelijk is. De eiwitten komen van de rode linzen en de paddenstoelen, een prachtige combinatie van texturen en &#8220;vlezige&#8221; smaken. Deze saus is perfect voor alle pasta&#8217;s: standaard, volkoren en &#8216;alternatief&#8217;, bijvoorbeeld gemaakt met peulvruchten zoals rode linzen, of met konjac, zeewier en andere ingredienten.<\/p>\n<p>Je kunt een grote batch bereiden en deze in porties bevriezen, omdat de saus mooi vriest. Altijd handig voor een snelle en gezonde maaltijd.<\/p>\n<p>De hele wereld eet spaghetti met bolognese en wij Italianen vinden dat best raar, omdat we deze prachtige saus meestal combineren met eiertagliatelle. Gezien het feit dat ik deze keer niet het klassieke recept heb gemaakt, heb ik het met gewone linguine gegeten. ?<\/p>\n<p>Zorg ervoor dat dit best lang blijft pruttelen. Minimaal een half uur als je de linzen in je mond nog duidelijk wilt voelen en 1 &#8211; 1,5 uur (voeg zo nu en dan wat heet water toe om te voorkomen dat de saus aan de bodem van de pan plakt) als je, zoals ik, wilt dat ze volledig in de saus &#8220;smelten&#8221;. De originele Bolognese bevat geen basilicum, maar ik vind dat dit heerlijke verse kruid geweldig gaat met mijn vegetarische versie.<\/p>\n<p>Geniet ervan!<\/p>\n<p><b>Bolognese vegetariana \/ vegana<\/b><\/p>\n<p>Voor 2 personen<\/p>\n<p>Ingredi\u00ebnten:<\/p>\n<p>1 kleine ui of sjalot, gepeld<br \/>\n1 teentje knoflook, gepeld<br \/>\n2 laurierblaadjes<br \/>\n1 snufje gemalen kruidnagel<br \/>\n1 stengel bleekselderij<br \/>\n1 wortel<br \/>\n100 gr. gemengde paddestoelen (ik gebruikte kastanjechampignons &amp; portobello\u2019s)<br \/>\n\u00bd glas droge witte wijn<br \/>\n200 gr. <i>passata di pomodoro<\/i> (gezeefde tomaten)<br \/>\n3 handenvol rode linzen (ongeveer 75-80 gram)<br \/>\nextra vergine olijfolie<br \/>\nzeezout<br \/>\nzwarte peper<br \/>\nwat verse basilicumblaadjes<\/p>\n<p>Hak ui\/sjalot en knoflook fijn en fruit ze langzaam in een pan met 3-4 eetlepels olijfolie tot ze zacht en doorzichtig zijn.<\/p>\n<p>Voeg de fijngesneden wortel en bleekselderij toe en laat enkele minuten zacht worden. Voeg vervolgens de gesneden champignons toe en laat alles 2-3 minuten zachtjes garen op middelhoog vuur.<br \/>\nGiet de witte wijn in de pan, roer en wacht tot de alcohol volledig is verdampt. Voeg dan de passata, de rode linzen, een snufje gemalen kruidnagel en de laurierblaadjes toe en laat minstens \u00bd uur, bij voorkeur langer, heel langzaam koken.<\/p>\n<p>Voeg van tijd tot tijd een beetje heet water toe en roer regelmatig. In 2000 I started teaching Italian cooking at the Volksuniversiteit, as a hobby. In 2002 the hobby became my job and I opened my Italian cooking school in Amsterdam, La Cucina del Sole. In the meantime I've become a certified sommelier and I have written 3 cookbooks. One of them (\"Cucina di casa mia\") won \"3rd Best Italian Cookbook in the World\" in Paris during the Gourmand Cookbook Awards in 2012. Cooking and writing about food are two of my big passions.
