Perfect voor een doordeweekse dag, dus.<br \/>\nAls je een <strong>vegetarische\/vegan versie<\/strong> wilt laat de ansjovisfilets gewoon weg.<\/p>\n<p>Buon appetito!<\/p>\n<p><strong><br \/>\nPasta di farro con broccoli e limone<br \/>\n(speltpasta met broccoli en citroen)<br \/>\n<\/strong><\/p>\n<p>Voor 4 personen<\/p>\n<p>Ingredi\u00ebnten:<\/p>\n<p>500 g korte speltpasta (penne, tortiglioni enzovoort)<br \/>\n1 stronkje broccoli (ca. 350-400 g), in roosjes<br \/>\nbiologische extra vergine olijfolie<br \/>\n2 teentjes knoflook, gepeld en gehalveerd<br \/>\n1 tl grof gemalen zwarte peperkorrels<br \/>\n3-4 ansjovisfilets op olie<br \/>\n\u00bd biologische citroen, geraspte schil en sap<br \/>\nzeezout<br \/>\nverse oregano voor de garnering<br \/>\nBlancheer of stoom de broccoliroosjes tot ze beetgaar zijn.<\/p>\n<p>Kook de pasta <em>al dente <\/em>(beetgaar) en maak in de tussentijd de saus: doe de fijngesneden teentjes knoflook, \u00bd theelepel grof gemalen zwarte peper en de fijngehakte ansjovisfilets in 2 eetlepels olijfolie en fruit heel zachtjes. Prak de ansjovisfilets tot ze als het ware in de olie smelten.<\/p>\n<p>Voeg de gestoomde of geblancheerde broccoli toe en laat een paar minuten al roerend op smaak komen.<\/p>\n<p>Voeg de geraspte citroenschil en een scheut citroensap toe en laat nog 1 minuut garen.<\/p>\n<p>Giet de pasta af en voeg daaraan de gare broccoliroosjes toe, samen met 1 of 2 eetlepels olijfolie om het geheel smeu\u00efger te maken.<\/p>\n<p>Roer de saus en de pasta luchtig door elkaar en serveer gegarneerd met verse oreganoblaadjes.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Hoera! In 2000 I started teaching Italian cooking at the Volksuniversiteit, as a hobby. In 2002 the hobby became my job and I opened my Italian cooking school in Amsterdam, La Cucina del Sole. In the meantime I've become a certified sommelier and I have written 3 cookbooks. One of them (\"Cucina di casa mia\") won \"3rd Best Italian Cookbook in the World\" in Paris during the Gourmand Cookbook Awards in 2012. Cooking and writing about food are two of my big passions.
