Meestal doe ik een detox 1 \u00e0 2 keer per jaar, het liefst in de zomer, maar de herfst is ook prima te doen, als het niet te koud is (ik eet namelijk hoofdzakelijk fruit en groente en het is altijd makkelijker om lichte gerechten en veel rauw voedsel in de zomer te eten!).<br \/>\nMijn lunch op deze zonnige dag was dus een makkelijke en verrassend lekkere &#8220;pasta&#8221; (een salade, eigenlijk) bereid met alleen rauwe groente. Zo lekker dat ik meteen een tweede portie heb gemaakt (en gegeten). \ud83d\ude42<br \/>\nJe heb een speciale snijder voor zoodles\/courgetti nodig maar als je dat niet hebt kun je dunne plakken courgette met een mandoline of een mes snijden en dan verder in dunne slierten verdelen. Het is zo gebeurd!<br \/>\nDeze basis-salade kun je natuurlijk met allerlei andere ingredi\u00ebnten verrijken, bijvoorbeeld een gekookt eitje, wat cashewnoten, extra groente, tonijn, you name it. Ik wilde er een lichte vegan gerecht van maken en heb het geheel dus heel simpel en basic gehouden. Wel super lekker!<\/p>\n<p>Deze hoeveelheden zijn genoeg voor 1 persoon.<\/p>\n<p>Ingredi\u00ebnten:<\/p>\n<p><strong>SPAGHETTI:<\/strong><br \/>\n1 kleine courgette (of de 1\/2 van een grote)<br \/>\n1 handjevol mini Roma of cherry tomaatjes<br \/>\n1 handjevol platte peterselieblaadjes<\/p>\n<p><strong>PESTO<\/strong>:<br \/>\n1\/2 avocado<br \/>\n2 eetlepels amandelschaafsel<br \/>\nsap van 1\/2 limoen<br \/>\n1 klein teentje knoflook, gepeld<br \/>\n2 takjes tijm, alleen de blaadjes<br \/>\n1 eetlepel extra vergine olijfolie<br \/>\n3-4 eetlepels koud water<br \/>\nzeezout en zwarte peper naar smaak<\/p>\n<p>Snijd de courgetti\/zoodles met de speciale snijder of met een koksmes en doe ze in een kom.<\/p>\n<p>Snijd de tomaatjes doormidden en doe ze bij de zoodles, samen met de gewassen peterselieblaadjes.<\/p>\n<p>Maak de pesto door alle ingredi\u00ebnten te malen m.b.v. de (staaf)mixer.
