Ik vind het fantastisch dat ze heel weinig nodig hebben om te groeien, zo rijk aan voedingsstoffen en mineralen zijn en ook nog supersnel om te kweken. Bovendien zijn ze de perfecte vervanging van vlees qua structuur en &#8220;vlezigheid&#8221; als je (deels) vegetarisch wilt eten zoals ik.<br \/>\nDit pat\u00e9 is het perfecte voorbeeld hiervan. Romig, smakelijk, vullend en fantastisch als broodbeleg.<\/p>\n<p>Vandaag heb ik het op rijstcrackers gegeten en ervan gesmuld! Mijn paddopat\u00e9 was de basis en dan heb ik plakjes <strong>avocado<\/strong>, pittige <strong>rucola, kiemen<\/strong> en <strong>geschaafde amandel<\/strong> toegevoegd, plus zout en versgemalen zwarte peper voor de extra smaak. Erg lekker.<\/p>\n<p>Om deze pat\u00e9 te bereiden kun je ook andere soorten noten gebruiken, bijvoorbeeld cashews, die een heerlijke, romige smaak hebben. Ik heb amandelen gebruikt, die dichter bij mijn Italiaanse roots staan. Het is wel belangrijk dat ze eerst in water geweld worden, en het liefst de hele nacht. Als je niet zoveel tijd hebt is 1,5 \u00e0 2 uur meestal ook genoeg.<br \/>\nVoor een <strong>vegan versie<\/strong> kun je kokosyoghurt gebruiken.<br \/>\nEn nu: aan het koken! \ud83d\ude42<\/p>\n<p><strong>Vegetarische paddenstoelen-notenpat\u00e9 (pat\u00e9 vegetariano di funghi e mandorle)<\/strong><\/p>\n<p>Voor 4-6 personen<\/p>\n<p>Ingredi\u00ebnten:<\/p>\n<p>2 sjalotjes<br \/>\n2 teentjes knoflook<br \/>\n350 gr. gemengde paddenstoelen<br \/>\n10 gr. gedroogde <em>porcini<\/em> (eekhoorntjesbrood)<br \/>\n120 gr. blanke amandelen of cashewnoten<br \/>\n2 eetlepels volvette (geiten)yoghurt<br \/>\n6 eetlepels gekookte bonen of kikkererwten<br \/>\nverse tijm, 5-6 takjes plus een paar voor de garnering<br \/>\nzeezout<br \/>\nzwarte peper<br \/>\nextra vergine olijfolie<\/p>\n<p>Week de amandelen of cashewnoten minstens een paar uur in koud water.<\/p>\n<p>Week de <em>porcini<\/em> in warm\/heet water voor circa 10 minuten en snijd daarna in stukken.<\/p>\n<p>Snipper de sjalotjes en de teentjes knoflook en fruit ze zachtjes in een paar eetlepels olijfolie. Voeg de champignons\/paddenstoelen in plakjes toe samen met de <em>porcini<\/em> en laat alles goed garen en het vocht verdampen.<\/p>\n<p>Gebruik de mixer om noten, bonen\/kikkererwten, de iets afgekoelde paddenstoelen, de yoghurt en wat tijmblaadjes samen te pureren.<\/p>\n<p>Voeg zout en zwarte peper naar smaak en meng goed door.<\/p>\n<p>Doe de pat\u00e9 in een mooi bakje, garneer met takjes tijm en serveer met vers brood of op rijstecrackers.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Mijn liefde voor paddenstoelen blijft met de dag groeien en ik vind het steeds lekkerder en uitdagender om nieuwe gerechten te proberen met deze wonderlijke producten. In 2000 I started teaching Italian cooking at the Volksuniversiteit, as a hobby. In 2002 the hobby became my job and I opened my Italian cooking school in Amsterdam, La Cucina del Sole. In the meantime I've become a certified sommelier and I have written 3 cookbooks. One of them (\"Cucina di casa mia\") won \"3rd Best Italian Cookbook in the World\" in Paris during the Gourmand Cookbook Awards in 2012. Cooking and writing about food are two of my big passions.
