Voor wie het niet wist, het eiland heeft een <a href=\"https:\/\/en.wikipedia.org\/wiki\/Emirate_of_Sicily\" target=\"_blank\" rel=\"noopener\">lange Arabische bezetting gehad<\/a> (door <em>i Saraceni<\/em>, zoals de Arabieren daar werden genoemd). Sicili\u00eb is dan ook niet voor niets de enige Italiaanse streek waar <strong>couscous<\/strong> (in het Siciliaans <em>c\u00f9scusu<\/em> genoemd) best gewoon is, vooral in de buurt van de stad Trapani, waar jaarlijks zelfs een couscous festival wordt georganiseerd (<a href=\"http:\/\/www.cuscusu.it\" target=\"_blank\" rel=\"noopener\">hier vind je informatie erover<\/a>).<br \/>\nDe eerste verovering van de <em>Saraceni<\/em> was het klein eilandje <strong>Pantelleria <\/strong>en dit gerecht komt rechtstreeks daar vandaan. Er bestaan talloze versies ervan, met verschillende groente (courgette en aubergine als eerste, omdat deze mooie groente veelvuldig op Sicili\u00eb geproduceerd worden) en vaak, zo niet altijd, met de beroemde <strong>Siciliaanse kappertjes<\/strong>.\u00a0 Ik heb gekozen voor een versie met paprika&#8217;s.<\/p>\n<p>Sciakisciuka is perfect als ontbijt, lunch \u00e9n avondeten, bovendien is heel makkelijk om te maken. Waar wacht je nog op?<\/p>\n<p>P.S.: als je <em>passata di pomodoro<\/em> (gezeefde tomaten) gebruikt Kun je de saus korter garen, zo&#8217;n 8 \u00e0 10 minuten.<\/p>\n<p>Ingredi\u00ebnten voor 2 personen:<\/p>\n<p>1 kleine ui, versnipperd<br \/>\n1 teentje knoflook, fijngesneden<br \/>\ne.v. olijfolie<br \/>\n1 blikje gepelde tomaten met hun sap<br \/>\n1 rode paprika<br \/>\n1 gele paprika<br \/>\n2 eetlepels kappertjes op zout of in azijn, goed afgespoeld<br \/>\n1 of 2 eieren p.p.<br \/>\nzout en zwarte peper<br \/>\n1 handjevol fijngesneden bladpeterselie<\/p>\n<p>Fruit de ui en het teentje knoflook in een paar eetlepels olijfolie tot zacht en glazig.<\/p>\n<p>Voeg de in reepjes gesneden paprika&#8217;s toe en laat ze een paar minuten op hoog vuur meegaren.<\/p>\n<p>Voeg de gepelde tomaten toe en laat alles zo&#8217;n 15 minuten langzaam pruttelen. Als het nodig is, voeg af en toe een scheut heet water toe als de saus te droog dreigt te worden.<\/p>\n<p>Voeg de eieren aan de saus toe. Koken en schrijven over eten zijn twee van mijn grote passies. Verder hou ik van lezen, reizen, tangodansen, quality time met vrienden en familie en Tarotkaarten leggen. Ciao! In 2000 I started teaching Italian cooking at the Volksuniversiteit, as a hobby. In 2002 the hobby became my job and I opened my Italian cooking school in Amsterdam, La Cucina del Sole. In the meantime I've become a certified sommelier and I have written 3 cookbooks. One of them (\"Cucina di casa mia\") won \"3rd Best Italian Cookbook in the World\" in Paris during the Gourmand Cookbook Awards in 2012. Cooking and writing about food are two of my big passions.
