🥕 A simple side dish I made two Sundays ago: mixed roasted veggies with garlic and thyme.
🥕 A baking dish full of carrots, courgette, red beets, cherry tomatoes and bell peppers drizzled with good ev olive oil and sprinkled with salt and pepper. A few thyme twigs and whole garlic cloves and that’s it. Roast at 170 degrees C until soft and beautifully caramelised (the time depends on your oven, I started with 15 minutes and kept on adding 10 more each time until I was satisfied with how they looked and felt when I pierced them with a fork).
